I’ll give you a few:

George, Daisuke, and a few other characters do not appear in the anime.

Jerome is alive and well in the manga. He dies in the anime.

The anime ends after the Hougen arc. The manga continues beyond that.

Gajou gets blown up near the end of the Hougen arc in the manga.

When I think of it,two things come to my mind:
John's death in manga is much more scarier and painful.
Gin doesn't do much in anime.He at least tried to escape from Hogan's base in manga.He proves himself a weakling in anime.

I wouldn't exactly say Gin was a weakling for staying injuried in the anime...
John, Gin, and Hiro fought over 200+ of Hougen's soldiers. They were probably purposely tortured until their limbs couldn't work right. They're old men at this point, it's freezing cold, and were still beaten around from time to time if they said the wrong thing.
John's injuries didn't severely hurt his limbs enough to the point of not being able to walk like Gin's injuries did, so that's why John was able to walk (but badly) with Hiro and Reika.
When Gin gives Tesshin/Mole his message, he said he wouldn't last until April. That's not weakness, that's just how wounds should work and if he knew he was on death's door, then... well.... he should of stayed injured and not suddenly okay enough to walk...

I feel like if anything, Gin just got less plot armor in the anime xD

I think you are right.I took it too far cause I like Gin and John more than anybody in GDW.

I have no idea if Sniper appeared in Weed anime but I have not seen a single screenshot of it so that

That was Tokimune, Gin's substitute. I think in episode 3 or 4 Smith says there are substitutes for Gin, Akame, and John, while the real ones are out, constantly traveling to settle quarrels. The subtitutes for Akame and John were killed (shot by humans) in the same episode as Tokimune.
